You’ll whip up a pineapple salsa with scallion and lime, then warm fully cooked pulled pork with our Fajita Spice, some pineapple juice, and garlic. • Wash and dry produce.
• Trim and thinly slice scallions, separating whites from greens. Quarter lime. Trim and discard root end from lettuce; separate leaves.
• Drain pineapple, reserving juice in a medium, microwave-safe bowl.
• Shred pulled pork* into bite-sized pieces using your hands or two forks (using your hands is much faster); transfer to bowl with reserved pineapple juice. Stir in scallion whites, garlic powder, half the tomato paste, half the Fajita Spice Blend, and half the brown sugar (all the tomato paste, all the Fajita Spice Blend, and all the brown sugar for 4 servings). Cover with plastic wrap and microwave until warmed through, 2 minutes. Stir to combine. Season with salt and pepper to taste.
• Meanwhile, in a small bowl, combine pineapple chunks, scallion greens, and a squeeze of lime juice. Season with salt and pepper.
• Divide lettuce between plates and fill with pork; top with pineapple pico de gallo. Crush tortilla chips over top; drizzle with hot sauce to taste and serve.
I feel almost bad giving this only 4 stars, because the flavors were good (like 7 out of 10, I'd say) and it was super easy to make, which I LOVE and is always something I look for. I guess I'm discovering that while lettuce wraps sound good in theory, in reality they're not very enjoyable to eat. at least for me. I felt like half the ingredients ended up on the front of my shirt, or landing back in the plate, so I needed a fork to eat this anyway, negating the purpose of having a lettuce wrap as the delivery vehicle for the filling in the first place. The ingredient combination is a winner, I'd definitely do a recipe with pulled pork and pineapple again, maybe over rice, but I think my experimental phase with lettuce wrap-type meals has come to its end. 5 stars for the ingredients and originality, though!
A perfect quick and easy lunch, not the most filling meal, but still very tasty. I opted out the pineapple for fresh which made a huge difference but even then the flavors of the pulled pork were fantastic
Super easy and really tasty. I ended up using my own chips though because the ones that came with the kit tasted a little like burnt oil. Loved it though.
