I mixed the jam and a little chili flake into the ricotta to make it easier/less messy to eat. Worked great. It could have used more or a stronger flavored prosciutto. The flavor of prosciutto provided was not very noticeable while eating. But overall this was a very well balanced, flavorful dish!

Love the simplicity of this one. I added the jam directly on top of the ricotta before I added the arugula. It turns out less messy when you bite into it.

This sandwich is just fabulous! Delicious! So fresh tasting and easy to make! I don't care for the taste of arugula, so I substituted it with some spinach, and it worked for me!

Pretty difficult to eat as an open-faced sandwich, so I made it closed. Prosciutto is hard to cut cleanly, and it definitely needs more jam for the sweetness. The sandwich was just a bit on the dry side.

Spread the jam over the ricotta directly not on top of everything. It'll more evenly disperse the jam and make sure it's in every bite. I also felt like there wasn't enough jam included. I used the packet for 2 open face sandwiches and my own jam for the other two.

I didn't chop the prosciutto or use the jam (I laid the prosciutto flat on top of the ricotta cheese.) However this has become something I make for lunch on my work from home days because it's so quick and requires very little effort. Also I love how fresh, light, and healthy it is.
