  • In a medium bowl, combine soy sauce and ginger paste. Add organic chicken; stir to combine and set aside to marinate.

  • Place flour in a separate medium bowl. Season with salt and pepper. Stir to combine.

  • Once potatoes are cooling, heat a ⅓-inch layer of oil in a large, heavy-bottomed pan over medium-high heat. When oil is hot enough that a drop of flour sizzles when added to the pan, add coated organic chicken; cook, turning occasionally, until golden brown and cooked through, 4-6 minutes. (For 4 servings, cook in batches.) (TIP: If chicken is browning too quickly, lower heat to medium.)

  • Using a slotted spoon or spatula, transfer organic chicken to a paper-towel-lined plate. Season with salt and pepper.

  • To bowl with cooled potatoes, add cucumber, applescallions,

  • mayonnaise, vinegar, and 1 tsp sugar (2 tsp for 4 servings). Stir to combine.

  • Season with salt and pepper. Top with a pinch of chili flakes (if you like things spicy, add more to taste).
