You’ll pan-sear chicken, pineapple, corn, scallions, and garlic with blackening spices, and tuck it all into warm tortillas with crisp, tart cabbage slaw and smoky chipotle crema. Finish with fresh lime and a side of blue corn chips and green salsa for a fresh, colorful dinner in a flash!

• Wash and dry produce. Drain pineapple. Drain half the corn (all for 4). Thinly slice scallions, separating whites from greens. • Pat chicken* dry and season with salt and pepper. Drizzle oil in a hot pan; cook chicken, pineapple, corn, and scallion whites until cooked through, 6-7 minutes. • Grate garlic directly into pan, then add Blackening Spice and cook until fragrant, 1-2 minutes.

• Cut lime into wedges. In a bowl, toss cabbage, scallion greens, a drizzle of olive oil, a big squeeze of lime, salt, and pepper. • In a bowl, mix sour cream, half the chipotle powder (all for 4), and a squeeze of lime.

• Wrap tortillas in damp paper towels; microwave for 30 seconds. • Spread chipotle crema over tortillas; fill with chicken filling and slaw. Serve with chips, salsa, and any remaining lime wedges.
Chicken is fully cooked when internal temperature reaches 165°.
Chicken really tasty and good quality, all the produce is good quality and fresh as well! The tortillas were so good, and my skeptical husband was pleased with the ratio of pineapple in the mix. It was easy to leave the crema off of picky hubby's tacos (more for me!)

A fantastic blend of flavors! The sweet pineapple and tart cabbage make the taste so interesting and delicious.
A little excess of cabbage slaw that took away from the pineapple flavor. Also, between the blackened spice and Chipotle cream this has some kick to it!
The slaw needed more sour cream or even some mayo for more creaminess and more liquid acid like more lime juice or vinegar. Other than that, the combination of corn and pineapple with the spice blend was so balanced and juicy! It was easy to make and the verde salsa was very flavorful!
So these tacos are really good but if I can recommend one thing: Palo Alto Firefighters hot sauce. If that's not in your region maybe you have a good go-to sweet smoky hot sauce but wow, the tacos are good but a little hot sauce really lights up the flavors of the pineapple sweetness and it's fireworks
Very tasty! We really liked the cabbage and corn combined with the chicken. Tacos were simple, but flavorful!
This was our 2nd Hello Fresh recipe and we all loved it! Even the kids, who are sometimes picky. The corn/pineapple mix is something I need to make again on my own, so good! Hope to see this one on the menu again!
