COOK RICE

  • In a small pot, combine rice, 1¼ cups water (2¼ cups for 4 servings), and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.

  • Peel and grate ginger. Peel and mince or grate garlic.

SEASON & COOK CHICKEN

  • Pat chicken* dry with paper towels. In a medium bowl, combine chicken and flour; season with salt and pepper.

  • Heat a large drizzle of oil in a large pan over medium-high heat. Add chicken in a single layer (be careful—the oil may splatter); cook, undisturbed, until browned, 2-3 minutes per side (chicken will finish cooking in the next step). (For 4 servings, you may need to work in batches.)

FINISH RICE

  • Roughly chop peanuts.

  • Fluff rice with a fork; stir in peanuts and 1 TBSP butter (2 TBSP for 4 servings). Season with salt and pepper to taste.

SERVE

  • Divide peanut rice between bowls. Top with chicken and edamame and serve. TIP: Finish with your favorite hot sauce for an extra kick!

First, YAY for the creativity of this recipe, it was nice to see something other than zucchini or broccoli or carrots or green beans. And the edamame adds protein and texture which are always good! Overall I did like this and would get it/make it again. HOWEVER I would strongly suggest that the instructions be edited to grate/mince the ginger TO TASTE because there was no way I would've been able to use the whole thumb of ginger that was provided - I stopped at half and that was already a LOT of ginger. I'm glad I stopped because the plum jam was lovely and if I'd used all of the ginger it would've completely obliterated the taste of the plum. I also added celery (for crunch w the peanuts) and sauteed some white onion with the chicken. I would love to see a future recipe that uses the plum jam alone (without the ginger & dijon) because it has a really nice sweet/tart balance. Overall a yummy & satisfying meal.

I loved this dish! I was worried the plum would make it to sweet but it was perfect and one of my favorite dishes yet! Only complaint is my chicken was very fatty so I had to spend time cutting more fat off of it but the flavors were great.

I loved the edamame and the use of dark meat chicken instead of breast. The sauce didn't have the punch of flavor that I was expecting. The ginger in my kit had the heat but not the flavor. I still really enjoyed the dish. I appreciated the addition of the peanuts.

The ginger chicken and edamame didn't turn out as expected. This combination was somewhat dry, and wasn't enough to mix with the rice. The amount of rice overwhelmed the chicken and edamame so you couldn't taste that combination. It was all rice!

Positives, I loved getting edamame, peanuts and the plum jam flavoring. There was a great amount of rice which stretched the meal. Negatives, not enough sauce and y'all the chicken pieces sludge! It sticks to the paper towels and it won't come off. I keep trying to give you a chance that this changes but it hasn't. I'm not doing to be able to order your chicken meals.

Tasted good. Little skimpy on the veg. I added some sautéed Shanghai cabbage as a side which rounded out the dish nicely. Definitely preferred chicken thighs to breasts in this dish although I would prefer to cut them up myself. The knife work on the packaged thighs was pretty awful.

Once again I ordered a meal with rice and need to look for alternatives. However this was a good meal and I enjoyed it. I probably should have cooked the edamame a little longer as it was very al dente!
