I really hate the arugula salad, but HOT DAMN this sandwich is SO GOOD! This is in my top 5 recipes. If I see this as an option, I select it.
We love the ciabatta bread- it's a real "treat". The chicken is tasty and well spiced; I really like the addition of pesto. If I get this again, I'll add cooked onion.
The pesto was an excellent flavor choice. Remember the cutlets are thin, be careful not to overcook them. Totally enjoyed this recipe!
These were delicious! Only thing I would change would be the bread. I feel it needs a lighter, thinner bread.
Yum! Makes like 3 1â2 small sandwiches, though. But enough arugula for an army

Took significantly longer than 15 minutes to prepare. Chicken would need to come pre-cooked to make this a 15 minute meal.
Did not fix right away like over a week, and the salad got soggy. Rest of sandwich was delicious. As good as expected and so easy and quick to fix. Next time I won't wait so long to fix.
Threw out the bread bc I'm GF. Used my own bread. Didn't use the balsamic. Everything else was very good, chicken, pesto, mozzarella, arugula.
