Add chicken; cook until browned and cooked through, 3-5 minutes per side. (If chicken is browning too quickly, reduce heat to medium and cover until cooked through.) Transfer to a cutting board.

• Meanwhile, zest and quarter lemon. Halve, core, and thinly slice apple. • Add as much lemon zest as you like to bowl with panko. Stir to combine.

• In a large bowl, whisk together dressing, a drizzle of olive oil, and juice from one lemon wedge (two wedges for 4 servings).

• Add apple, spinach, and half the lemony panko to bowl with dressing. Toss to combine. Taste and add more lemon juice and season with salt and pepper if desired.

• Thinly slice chicken crosswise. • Divide salad between shallow bowls. Top with remaining lemony panko. Fan sliced chicken alongside salad. Serve with any remaining lemon wedges on the side.

This version of the apple spinach salad varieties is the best. Mostly because of the amount of dressing and adding the lemon juice to the dressing. The fry seasoning on the chicken paired really nicely with the citrussy salad.

Absolutely delicious! I rarely enjoy mustard-flavored salad dressing, but this one was perfect for the spinach and the sweetness of the apples. The idea of the buttered Panko breadcrumbs was great. I intend to use that idea again.

The salad was great. The lemon and dijon dressing was very refreshing for the summer. The chicken was a little bland. I think a little bit of the dressing or some sort of sauce could have worked well to top off the chicken.

One of our favorite meals, was very pleased to get 2 equal sized chicken breasts of a very decent size! Especially love the spinach and apple salad, wish there had been a tad more of the spinach as the flavors are delicious!

Didn't think we were gonna like the apples in the salad but honestly it was the best part!! It balanced out the whole salad, and was a nice sweet taste between the savoriness of the chicken and the freshness of the salad
