• Wash and dry produce. • Cut broccoli into bite-size pieces if necessary. Trim and slice scallions, separating whites from greens. Quarter lime.

• Drizzle oil in a hot pan. Add chicken* in a single layer; season with salt and pepper. Cook, stirring occasionally, until browned and cooked through, 4-6 minutes. • Lower heat under pan; stir in sweet soy glaze and 2 TBSP water (4 TBSP for 4). Cook until sauce is slightly thickened and chicken is evenly coated, 1-2 minutes.

• While chicken cooks, in a microwave-safe bowl, combine broccoli, scallion whites, garlic powder, and 2 TBSP water (4 TBSP for 4). Cover with plastic wrap; poke a few holes in wrap. Microwave until tender, 1-2 minutes. Drain. (No microwave? No problem! Boil broccoli in a pot of salted water until tender, 2-4 minutes. Drain.) • Toss broccoli with as many chili flakes as you like. Season with salt. • Massage rice package; snip to partially open. Microwave for 90 seconds. Carefully open package; mix in cashews, 1 TBSP butter, juice from one lime wedge, and a pinch of salt (2 TBSP butter and juice from two wedges for 4).

• In a second bowl, mix mayonnaise, chili sauce, and juice from one lime wedge (juice from two wedges for 4). • Top rice with saucy chicken and broccoli in separate sections. Drizzle everything with spicy mayo. Top with scallion greens and crispy fried onions. Serve with any remaining lime wedges on the side.
Chicken is fully cooked when internal temperature reaches 165°.
So TASTY! I would recommend doing all of the prep needed in steps 3 and four (pre mixing the mayo and getting the Broccoli already in the microwave) before you actually start cooking the chicken. Step one for prep was great, but having all the other steps AFTER you have already started cooking the chicken would have been chaotic. I also only used one packet of the sweet soy glaze because I prefer more savory flavors, and it turned out awesome!
Really liked this one. The crunchy onions on top added just the right touch. The freshness of the broccoli was perfect to offset the touch of spicy in the glaze on the chicken. Very yummy. I would love to see this dish again!
This was amazing!! So delicious and easy to make. Another new favorite. The cashew nuts and crunchy onions were a nice touch. The broccoli was really good along with the chicken, rice and sauce.
I think there was too much sweet soy glaze for this dish. It ended up being a little too salty and I think if there was less of that sauce, it would have been better!
Loved that this came with microwave rice. So much easier and quicker than cooking it on the stove. I skipped half the directions and just added the broccoli halfway through the chicken cooking and cooked it all together. Either way loved the flavor and style of this meal.
I really liked this meal. I was missing a couple ingredients for the rice, so I think it was a bit blander than intended. The chicken was yummy, and the sauce made the broccoli and rice taste good. I liked how easy this meal was to make. I did not want the mayo sauce, so chose to omit it.
The sauce on the chicken was wonderful....tangy, spicy, sweet! Great combined with the rice and broccoli. I love that the ingredients are so fresh.

Loved this one!!! We ended up roasting the broccoli in the oven and we skipped the cashews in the rice. But loved the soy glazed chicken.
I love anything with soy sauce! This was super easy and delicious. Always the perfect serving amount. I did have to use my own frozen broccoli as the fresh broccoli included had turned.
