• Drain and rinse beans.
• Place pulled pork* in a large microwave-safe bowl; shred into bite-size pieces using your hands or 2 forks. (TIP: Using your hands is much faster.) Add BBQ sauce, Sweet and Smoky BBQ Seasoning, half the beans (all for 4 servings), salt, and pepper; mix to combine. Cover bowl with plastic wrap; microwave until warmed through, 2-3 minutes.
• Meanwhile, wash and dry produce.
• Drain pineapple. Roughly chop cilantro. Quarter lime.
• Wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds.
• In a small bowl, combine pineapple, half the cilantro, and juice from one lime wedge (juice from two lime wedges for 4 servings); season with pepper to taste.
• Divide tortillas between plates and fill with pork and beans. Top tacos with pineapple salsa. Sprinkle with remaining cilantro and drizzle with as much hot sauce as you like. Serve with remaining lime wedges.
These are very good. When I first picked them, I was not sure how they would be based on the name. As a 65+ person the name "Pork & Bean Tacos" had me concerned with thoughts of Campbell's Pork & Beans. Was I ever wrong. But maybe a better name would be BBQ Pork & Black Bean Tacos. I know if I'd read the ingredients I would have seen Black Beans, but in today's world who reads the entire thing. Thanks for a good taco.
The meat was SUPER fatty! I spent a lot of time cutting off excess fat and was not hopeful it would be a tasty meal. It was. I would order again, but again the fat on the meat was successive. 3 Stars for taste and it truly was a 10-minute meal prep and the pineapple salsa was the cake topper!
Very tasty and portion sizes good. I made a coleslaw and included the pineapple in the salad to top the pulled pork bean mixture.
The pineapple salsa is underwhelming. I understand that this is supposed to be a quick meal. But the pineapple salsa needs a little more, I think. This needs another pop of acidity because the lime isn't enough, in my opinion.
This had everything I love about BBQ; tender and juicy pulled pork and flavourful sauce with a hint of heat. Blew away my expectations.
Very tasty, but...I had to take a lot of chunks of fat off of the pork pieces before I warmed it up, and I would have enjoyed more fresh green stuff. Bell pepper, perhaps? Overall though a great lunch for Dad and me. We enjoyed it. Thanks!
Wasn't sure I'd like but these tacos were delicious and fast and easy to cook!!
Easy and very tasty! I like all the ingredients and how they mixed together in the end!
It was so quick and easy!! Good flavor too. (Except for the cilantro, tastes like soap). Needed something crunchy and fresh though - maybe cucumber or iceberg lettuce - that would have made it perfect!
Would suggest some French fried onions or some raw cabbage to give it a crunch but delicious all the same.
