Get ready for everything you love about cheeseburgers—all the flavors, all the juiciness, all the melty cheese, the taters, pickles, special sauce—without the bun! You’ll combine ground beef, cheddar, and panko to make savory, cheesy meatballs that crisp up perfectly in the oven alongside garlicky golden-brown potato wedges. While they roast, you’ll whip up a sweet and tangy special sauce of ketchup, mayonnaise, mustard, and minced pickle for the ultimate spread and dipper. Can you say: “crowd-pleaser”?

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

Prep & Roast Potato Wedges
1

• Adjust racks to top and middle positions; preheat oven to 425 degrees. Wash and dry produce. • Cut potatoes into 1⁄2-inch-thick wedges. Mince a few pickle slices until you have 1 TBSP (2 TBSP for 4 servings). • Toss potatoes on a baking sheet with a large drizzle of oil, half the garlic powder (you’ll use the rest in the next step), salt, and pepper. Roast on top rack until golden brown and crispy, 20-25 minutes.

Make Meatballs
2

• Meanwhile, in a large bowl, combine beef*, cheddar, panko, stock concentrate, remaining garlic powder, and 1 TBSP water (2 TBSP for 4 servings). Season with salt (we used 1⁄2 tsp; 1 tsp for 4) and pepper. • Form mixture into 10 11⁄2-inch meatballs (20 meatballs for 4). • Place meatballs on a second lightly oiled baking sheet. • Roast meatballs on middle rack until browned and cooked though, 12-15 minutes.

Make Sauce
3

• While meatballs roast, in a small bowl, combine minced pickle, mayonnaise, mustard, and ketchup. • Divide special sauce between two small serving bowls (four bowls for 4 servings).

Serve
4

• Divide potato wedges, meatballs, and remaining pickle slices between plates. Serve with special sauce on the side for dipping.

Ground Meat is fully cooked when internal temperature reaches 160°.

Family absolutely loved this recipe! Easy steps and I like that I can bake the cheeseburger meatballs not pan fry. Sauce and fry sides made this recipe a chef kiss. Thanks HelloFresh!

This recipe is a great alternative to the classic firecracker meatballs, but as I was going through the recipe it felt like something was missing. I had a spare onion so I made a batch of meatballs as instructed but another batch with diced onion and pickles, and the cheeseburger flavor felt more complete with those included. I think including 1 onion or shallot for both the meatball mix and the sauce would really tie the recipe together.

This was a really flavorful meal. I misread some instructions and combined too much so I ended up making a cheeseburger bowl with the fries on bottom, meatball mixture ( plus everything for the sauce), and topped with lettuce. It was delicious.

The fries were so great with this meal! The addition of garlic was a plus! The meatballs with the sauce were also so tasty!

These meatballs were fantastic. I never made meatballs like this before but I will definitely make them again. And I never made french fries using fresh potatoes before either. Such a great meal. We didn't make the dip mixture because my husband and son don't like mayo or mustard but I dipped mine in ketchup and they dipped in bbq sauce. It was a hit!!!

These meatballs were delicious and the potatoes too! The pickles were ok, but we had other pickles at home to supplement with, so overall, it was a great meal.

I really love this one. We've had it twice now. It seems like nothing especially interesting, but it tastes super delicious with the cheese and the dip with the meatballs.

These are fun! Pay attention when cooking the meatballs so the cheese doesn't make a black crust.

A new favorite! This was a delicious and clever way to "deconstruct" a cheeseburger. Also, it was simple and quick to prepare but didn't taste like it.
