Step aside, side salad—this hearty kale version is the stuff of lunch dreams. We mix the tenderized greens with cooked chicken, apple slices, cabbage, and carrot, then we toss it with a creamy, tangy honey Dijon dressing and sprinkle it with chili flakes for a warming kick. This is a hearty-yet-light-feeling lunch idea you’re going to want to make even when it’s not harvest season.

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

1

• Wash and dry produce. Pat chicken dry with paper towels; dice into ½-inch pieces. Halve, core, and dice apple.

2

• Place kale in a large bowl and drizzle with olive oil. Using your hands, massage kale until leaves are tender, 1-2 minutes. Season with salt and pepper.

3

• Add chicken, coleslaw, apple, 2⁄3 of the dressing, a pinch of salt, and pepper to bowl; toss to combine.

4

• Divide salad between bowls. Drizzle with remaining dressing and sprinkle with as many chili flakes as you like. Season with salt and pepper and serve.

I'd eat this every day. Love how the kale tasted after massaging it. That made a ton of difference with the texture. The chicken was so tasty. This recipe turned into 3 generous sized lunches.

Very quick and easy and so delicious! If you sold the honey dijon dressing in bottles, I would totally order some!

SUPER QUICK AND EASY! This salad had great flavor! I always toss the precooked chicken in the microwave for a minute or so to warm it up because cold chicken on salad is gross.

So easy to prepare, a great melding of flavors. The tart Granny Smith apple with the subtle sweet Honey Mustard topped with a dash of red pepper was delicious!

Easy and yummy. Nice crunch from the apples. I added low sugar craisins and lemon juice and only used 1/2 the dressing. A lighter dressing would be even better.

Massaging the kale with olive oil really takes the bitterness out of the kale!

I love the different seasonal kale salad dishes. Full of flavor and always leftovers for lunch.

The dressing was good (I've always loved honey mustard dressing) and the veggies were fresh. I really really did not like the chicken that was sent. It really needs some sort of seasoning. Also, the salad as a whole was not great (would have been worse without the apples). Personally, I would not get this again which is why I gave it 2 stars.
