Cooking Steps

Prep

  • Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce.

  • Trim green beans if necessary.

  • In oven-ready tray, toss green beans with a drizzle of oilhalf the garlic powder (you’ll use the rest in the next step)salt, and pepper. (For 4 servings, divide everything between two trays.)

  • In a small bowl, combine pankosesame seeds1 TBSP olive oil (2 TBSP for 4), a pinch of salt, and pepper

Roast Chicken & Green Beans

  • Pat chicken* dry with paper towels and season all over with remaining garlic powder, salt, and pepper. Arrange over green beans (for 4 servings, divide chicken between two trays).

  • Brush tops of chicken with mayonnaise; mound with panko mixture, pressing firmly to adhere (no need to coat the undersides).

  • Roast on middle rack (be sure your oven has preheated!) until green beans are tender, topping is golden brown, and chicken is cooked through, 20-25 minutes. (For 4, roast two trays side by side on top rack.)

Heat Rice

  • When chicken has 5 minutes left, empty rice into a medium microwave-safe bowl (breaking up rice with your hands). Add 3 TBSP water (6 TBSP for 4 servings). Cover tightly with plastic wrap; microwave until rice is warmed through and tender, 1½-2 minutes.

  • Fluff rice with a fork. Stir in 1 TBSP butter (2 TBSP for 4); taste and season with salt and pepper if desired. 

Serve

  • Divide chickengreen beans, and rice between plates in separate sections. Top chicken with spicy mayo and serve.
