Great meal, but you need some really large bowls to hold everything once assembled. We nearly didn't make it. A suggested alternate presentation: Serve the toasted pita and fried falafel on the side with the hummus for dipping. (Could even just halve the pita and stuff the finished falafel pieces inside and drizzle them with the garlic butter--basically four pita falafel sandwiches.) Have the remaining salad consist of the spinach, grape tomatoes (better halved), cucumber, feta, dill and dressing. You might also want to suggest if there are those who have difficulty chewing spinach leaves whole (as can be the case especially for those with dentures or dental bridges), the spinach could be chopped smaller after being washed.

Falafel tends to be a little dry, probably could use more hummus, and this order came without dressing (though I improvised and made my own), but this power bowl overall is a very good lunch meal. One of the few recipes we've grabbed twice happily

We're still fiddling with this one. For example, rather than all spinach, we mixed half of it with an equal amount of mixed greens we had on hand (the rest of the spinach will go in another salad). We also stuffed the pitas with the butter, hummus and falafels. Finally, we added more homemade vinaigrette dressing because the provided amount was low for our prefs. I think next time I might make a spiced lemony sour cream and dill drizzle to add to the pita 'sandwich'.

Delicious and quick to make. The falafel and pita make the calories and carbs skyrocket so for myself I would cut those servings in half.

I wish it had a yogurt dip or tzatziki with it. Falafel tasted good but a little dry without a creamier sauce.
