Mozzarella Cheese

Cherry Preserves
2 ounce
Shallot
25 milliliters
Red Wine Vinegar
½ teaspoon
Sugar
Salt
Pepper
1 teaspoon
Cooking Oil
Halve, peel, and slice shallot. In a microwave-safe bowl, combine shallot, vinegar, ½ tsp sugar (1 tsp for 4 servings), salt, and pepper. Cover with plastic wrap and microwave for 30 seconds. Set aside, stirring occasionally, until ready to use.
Slice mozzarella into ¼-inch-thick rounds. Spread bread with cherry jam; place on a clean work surface, jam sides up. Top with mozzarella and pickled shallots (drain first). Top with remaining bread jam sides down.
Heat a drizzle of oil in a large, preferably nonstick, pan over medium heat. Add sandwiches and cook until bread is golden and cheese has melted slightly, 2-3 minutes per side. (Work in batches if necessary.)
Halve and serve.

Yummy for a grilled cheese. The bread wasn't grilled cheese enough.. I think it needed butter outside
