Balsamic Glaze
4 ounce
Feta Cheese

Pistachios

Cooking Oil
Adjust rack to middle position and preheat oven to 425 degrees.
Roughly chop pistachios. Slice baguette crosswise into 8-10 rounds. Spread slices out on a baking sheet and drizzle with olive oil; season with salt and pepper.
Top slices with feta and toast on middle rack until feta is golden brown, 8-10 minutes. Drizzle with balsamic glaze and sprinkle with pistachios. Serve immediately.
We were pleasantly surprised with this. Normally, none of us would have tried it if it was on a restaurant menu, but decided to give it a try anyway. Absolutely delicious! The balsamic glaze was the perfect balance for the feta cheese and the pistachios added a lovely little crunch.
Holy CRAP these were delicious!!! I could eat these every day!! The tang of the feta with the nuttiness of the pistachio and then the balsamic glaze?? WOWZA
Easy and quick to make. Satisfying! Feta is an overpowering choice ...perhaps something a little tamer like a creamy goat cheese or ricotta may allow the pistachio and balsamic flavors to shine?
My favorite crostini I've tried so far. The balsamic goes really well with the feta and pistachio.
Good but we felt like you could increase the size of the baguette and still have plenty of toppings. We like balsamic vinegar but this was a bit too sweet & heavy and also hard to get it on the crostini evenly. Maybe slightly thinner/less sweet for drizzling?
The feta doesn't really melt so the chopped nuts didn't stay on well. That was the only downside, flavor was amazing.
Loved the flavors. Balsamic reduction would have been nice because it was so liquid, it was hard to keep on the bread and not have it just ooz all over the plate. Delicious tho!
I used to dislike balsamic but after having this I realized I just needed to try different kinds. I've since fell in love with a strawberry balsamic and have been making a similar recipe to this!
These were very tasty. We used half of the ingredients except the pistachios we used all.
