Pepper
Wash and dry produce. Pick mint leaves from stems and arrange in a stack; thinly slice crosswise into strips and; discard stems. Quarter tomatoes. In a small bowl, combine tomatoes, mint, a drizzle of olive oil, salt, and pepper. Toast bread until golden. Spread hummus on cut sides of bread; top with tomato mixture and feta. Serve.
