
“Tender” takes on a whole new meaning in this earthy, Latin American–inspired meal. Packed with shredded beef, tomato, peppers, onion, and garlic, this hearty mixture is cooked until it’s melt-in-your-mouth delicious. Latin-Style Shredded Beef
Preheat oven to 375 degrees (350 degrees for convection).
Remove outer packaging and pierce plastic film a few times with a fork or sharp knife to vent.
Place tray* on a baking sheet and bake until meal reaches an internal temperature of 165 degrees, 21-24 minutes. TIP: Carefully remove film and re-cover only rice and beans with foil during the last 5 minutes of cooking.
Let stand for 2 minutes. Carefully remove film and stir rice. Cut plantains in half lengthwise. Divide rice and beans between shallow bowls. Top with shredded beef and sliced plantains. Serve. *All trays and film are oven-safe.
This dish actually was a surprise like. When I first took it out of the box, I wasn't so sure. My biggest disappointment was the 3 very small pieces of plantains. Come on, the dish is supposed to serve 2, so why not at least give us 4? The plantains, IMO, is what really brings this dish together. You get the perfect bite with the shredded beef, rice and beans and then a piece of the plantain. That little pop of sweetness made each bite sing. Once the dish was plated, it looked so much better than what you were seeing in the container. I plated each item separately. The cost of the dish was a bit steep too. Honestly, this entire dish should be under [MASKED] not per person. Would I buy it again? Only if the price is reduced.
Flavors were great, but that wasn't enough overall for two portions. More rice, black beans, and plaintains would really have been nice to make a full meal while keeping to a reasonable and healthy amount of beef.
Tasted very good for being a pre-made meal. It heated well. The sweetness from the plantains balanced from the tomato forward beef. Only thing is I wished there was more beef it just kind of seemed like mush.
Loved this and were delighted by the completeness of this meal!! We used to live in a part of FL where we could get this "ropa vieja" (I probably butchered that spelling!) We are not Spanish but got used to great Cuban food living in Tampa. We definitely miss it!! This was a very good substitute.

Wow! So good! I am impressed!! Loved the flavors. My only concern was my plastic container melted a lot using the oven directions. A metal pan would have been better.
