Bring garlic herb butter to room temperature. Finely chop sun-dried tomatoes.
Spread sourdough with softened garlic herb butter; place on a clean work surface, buttered sides up. Evenly top with feta, sun-dried tomatoes, and mozzarella. Top with remaining bread slices, buttered sides down. Heat a drizzle of oil in a large, preferably nonstick, pan over medium heat. Add sandwiches and cook until bread is golden and cheese has melted slightly, 2-3 minutes per side. (Work in batches if necessary.)
Halve on a diagonal and serve.
The garlic butter with mozzarella and feta was amazing! I didn't care for sundried tomatoes, kind of big for the sandwich.
Hmm, a bit tough making grilled cheese with grated cheese. Liked adding the sundried tomato to the sandwich.
The bread choice is perfect. I would definitely chop the tomatoes up. This is a clever sandwich. Never would have thought to fix a grilled cheese sandwich like this.
These were delicious!! It's definitely a keeper recipe!! The only thing I missed to have with it was some warm tomato basil bisque to dip it in.
I've never had a grilled cheese with feta and I can only tell you I will 100% be ordering this again. Yum!
Need to include more sun-dried tomatoes. Too little tomatoes for the size of the sandwiches.
Super easy and yummy. Hard to cut the tomatoes so I ripped them with my hands or suggest using scissors.
Tasted great, but feta is a tough cheese to use for a grilled cheese because it doesn't melt as quickly as the mozzarella, so trying to flip this thing in the pan was a mess.
This was super good, I didn't really like the tomatoes as much as I thought I would, but the feta and mozzarella made me feel like I was eating a pizza.
Great mix up in a staple. Loved it with feta and mozzarella. Although the feta was a little messy.
