
This refreshing peach & feta mixed- greens salad features sweet peaches, creamy feta, and fresh greens. It’s dressed with a homemade shallot-sherry vinaigrette, which is used to marinate the sliced peaches before combining with the other ingredients for a burst of summer flavor.

5 teaspoon
Sherry Vinegar
1 teaspoon (tsp)

½ teaspoon (tsp)

2 tablespoon (tbsp)

Black Pepper
Wash and dry produce. Halve, peel and thinly slice shallot; finely chop slices. In a large bowl, combine shallot, ½ tsp sugar, and a pinch of salt; set aside, stirring occasionally. Halve peach and remove pit; thinly slice peach. To bowl with shallot mixture, add peach, vinegar, and 2 TBSP olive oil; stir to combine and set aside to marinate, 3 minutes. Add mixed greens and feta; toss until everything is evenly coated. Taste and season with salt and pepper if desired. Divide salad between plates and serve.
