Bring truffle butter to room temperature. Wash and dry produce.
Trim and thinly slice mushrooms (skip if your mushrooms are pre-sliced!). Halve, peel, and thinly slice onion.
Heat a drizzle of olive oil in a large, preferably nonstick, pan over medium-high heat. Add onion and mushrooms; cook, stirring occasionally, until browned and softened, 8-10 minutes. Season with salt and pepper to taste. Turn off heat; transfer to a medium bowl. Wipe out pan.
Spread sourdough with softened truffle butter; place on a clean work surface, buttered sides up. Evenly top with cheese and top with remaining bread slices, buttered sides down. Heat a drizzle of oil in same pan over medium heat. Add sandwiches and cook until bread is golden and cheese has melted slightly, 2-3 minutes per side. (Work in batches if necessary.)
Halve on a diagonal and serve.
This was just an add-on meal, and I liked it ever so much more than the regular meals I had ordered. They were BIG sandwiches, so much that I was able to eat one in two sittings, and my adult son ate a whole one, so three meals were had with this recipe, and this one was so much less expensive than the meal options. Wish we could just pick from these add-ons, as they give you much more bang for the buck.
Who would've known white cheddar, truffle, mushrooms, my God i? Quick easy and delicious. Perfect for an afternoon lunch.
Delicious and easy to make especially if you prep the onions and mushrooms ahead
Please update recipe, you don't have it noted when to add mushroom mixture back to the sandwiches. This could be very confusing, especially to newer cooks that follow recipes to the letter.
The sandwiches were tasty, but we each could only eat one half; they were richer/heavier than I thought they would be. We left the onions out, so that was probably our misstep.
Sooo good with an egg on it and some soup for delicious brunch! Yum!
Great taste and easy to make. Wish there was a little more cheese.
A little Rich for me. Maybe soon greens at the last minute or something would help?
Should have cooked it in a panini press, it was messy in the skillet when flipping
This wasn't one of my favorites. Needs a protein in my opinion. Onion was a bit much
