
These ground pork tacos taste slow-cooked, thanks to Southwest-style seasonings plus tomato paste for umami-packed richness, and savory onion and green pepper. It’s all stuffed into steamy tortillas with Monterey Jack cheese, pickled onion, tomato, and chipotle crema—basically, everything we crave on taco night and then some.

• Wash and dry produce. • Halve and peel onion; thinly slice one half and finely chop remaining. Core, deseed, and dice green pepper into 1⁄2-inch pieces. Dice tomato. Roughly chop cilantro.

• In a medium bowl, combine sliced onion, vinegar, 1 TBSP water, 2 tsp sugar, and salt (we used 1⁄2 tsp). Stir until sugar and salt have mostly dissolved. Set aside to pickle, stirring occasionally, until ready to serve.

• Heat a drizzle of olive oil in a large pan over medium-high heat. Add pork* and season with salt and pepper. Cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes. • Transfer to a plate and set aside.

• Heat a drizzle of olive oil in same pan over medium-high heat. Add green pepper and chopped onion; season with salt and pepper. Cook, stirring, until softened, 3-4 minutes. • Return pork to pan along with Southwest Spice Blend, stock concentrate, half the tomato paste (all for 4 servings), and 1⁄4 cup water (1/3 cup for 4). Cook, scraping up any browned bits from bottom of pan, until mixture is thickened and saucy, 1-2 minutes more.

• While filling cooks, in a small bowl, combine sour cream, a bit of onion pickling liquid to taste (start with 1⁄4 tsp and add more if desired), and a pinch of chipotle powder (add more to taste if you like things spicy). Stir in water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt and pepper. • Wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds.

• Divide tortillas between plates; fill with pork filling, tomato, Monterey Jack, cilantro, pickled onion (draining first), and crema. TIP: Alternatively, put everything in individual serving bowls and let everyone assemble their own tacos!
Ground Pork is fully cooked when internal temperature reaches 160º.
The pickled onion crema is going on my taco must have. This is so good. The tacos are excellent and easy to prepare.
Love love love this taco!!! So many good flavors all in one! Double the amount of sour cream the recipe calls for and maybe provide a lime to off-set the spicy/heat from the long green pepper.
Tastes great, but no way was there enough sour cream or cheese provided. Only a 1/4 cup of cheese is given for a 2 person serving. Read a bag at the grocery store, it is a 1/4 cup serving for 1 person. 1/4 cup for 6 tacos is not enough.
Meat was very tender. It would be 4 stars if there was a pico de gallo. Why include a step to pickle onions when there are chopped onions in the mix, that is just more work for nothing. Always include (2) packets of sour cream as (1) barely adds any flavor when you have to split it among (6) tacos
This was really good, especially on the reheat. It wasn't too bad, but I definitely get this again. The flavor was great and the pickled onions were a really good twist to it.
Really good tacos ~ loved the chipotle powder, it was a nice change from the red pepper flakes for heat ~ all of the taco meals I've tried have been really good but it was nice to get back to traditional mexican flavors
This would be even better if a fresh lime was included! Otherwise these tacos were quite delicious. Especially liked the pickled onions.
One of our favorites the seasoning and cook on the meat is so tender and tasty, while the tortillas are my most favorite type for this style of taco. Will order again

I wasn't sure what to expect with the meat and the flavors but I was pleasantly surprised overall. The pickled onion with the sauce and the fresh tomato was amazing!
