Adjust rack to top position and preheat oven to 450 degrees. Wash and dry produce.
Cut potatoes into ½-inch-thick wedges.
Toss potatoes in aluminum tray with a large drizzle of oil, half the fry seasoning (all for 4), salt, and pepper. Roast on top rack for 20-25 minutes.
Sprinkle Monterey Jack over potatoes. Return to oven until cheese is melted. Serve.
