  • Adjust rack to top position and preheat oven to 450 degrees. Wash and dry produce.

  •  Trim stem ends off green beans if necessary; halve widthwise.

     

     

     

     

ASSEMBLE BAKE

  • Open package of chicken* and drain off any excess liquid.

  • In oven-ready tray, combine chicken, green beans, a drizzle of oil, a pinch of salt, and pepper (for 4 servings, divide everything between two trays, using a drizzle of oil and a pinch of salt for each tray).

  • Bake, uncovered, on top rack (be sure your oven has preheated!) until green beans are tender and chicken is cooked through, 12-16 minutes (for 4, bake two trays side by side on top rack).

     

     

     

WARM RICE

  • When chicken and green beans have 3 minutes left, place rice in a medium microwave-safe, bowl. Add 3 TBSP water (6 TBSP for 4 servings), cover tightly with plastic wrap, and microwave until warmed through, 1½-2 minutes (microwave times may vary).

     

  • Stir in 1 TBSP butter (2 TBSP for 4) until melted. 

FINISH & SERVE

  • Once chicken is done, remove tray from oven. Carefully pour stir-fry sauce over chicken and green beans; stir to combine. Crush peanuts in their bag.

  • Divide rice and chicken and green beans between shallow bowls in separate sections. Sprinkle chicken and green beans with peanuts and drizzle with as much Sriracha as you like. Serve.

Add to the directions to drain the pan after the chicken and green beans are cooked. I'm glad I did and I cut a lot of fat off the chicken beforehand. A little too much ginger too. It was good but I could make this myself cheaper.

I found that the instructions on cooking the chicken may have been a bit off. The chicken ended up cooking in big chunks which didn't let it cook through in the allotted time. I had to cut up the chicken after 16 minutes, and let it cook for another 5-10 before it was brought up to over 165 degrees F.

The green beans were still very raw, so the texture was really unpleasant. I would suggest at least par-cooking the beans first (even just microwave). Otherwise it was an easy recipe with a good flavor. Meal alone was too small and there didn't seem to be enough rice. I added sliced almonds and mushrooms to make it more filling. Also made potstickers to round out the meal.

I followed the instructions and the chicken kind of clumped together and didn't cook evenly. I also felt the green beans needed longer to be properly cooked. I ended up taking the pan out of the oven and stir frying the green beans and chicken until properly cooked and then added the sauce as instructed. The recipe was good, but I wouldn't order this as a quick oven-ready meal again.
