• Wash and dry produce. • Cut broccoli into bite-size pieces if necessary. Trim and thinly slice scallions, separating whites from greens. Quarter lime.

• Pat chicken* dry with paper towels; season with salt and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Add chicken and cook until browned and cooked through, 3-5 minutes per side. • Reduce heat under pan to low; stir in sweet soy glaze and 2 TBSP water (4 TBSP for 4 servings). Cook, turning chicken occasionally, until sauce has slightly thickened and chicken is evenly coated, 1-2 minutes.

• While chicken cooks, in a medium microwave-safe bowl, combine broccoli, scallion whites, garlic powder, and 2 TBSP water (4 TBSP for 4 servings). Cover with plastic wrap; poke a few holes in wrap. Microwave until tender, 1 1⁄2-3 minutes. Drain. (No microwave? No problem! Boil broccoli in a pot of salted water until tender, 2-4 minutes. Drain.) • Toss broccoli with as many chili flakes as you like. Season with salt. • Massage rice in package to separate grains; partially open package. Microwave for 90 seconds. Carefully open package; stir in cashews, 1 TBSP butter, juice from one lime wedge, and a pinch of salt (2 TBSP butter and juice from two wedges for 4).

• In a small bowl, combine mayonnaise, chili sauce, and juice from one lime wedge (juice from two wedges for 4 servings). • Divide rice between bowls and top with saucy chicken and broccoli in separate sections. Drizzle everything with spicy mayo. Top with scallion greens and crispy fried onions. Serve with any remaining lime wedges on the side.
Poultry is fully cooked when internal temperature reaches 165°.
One of the best meals on the menu for how simple it is. The rice with lime and cashews is excellent and broccoli and scallion chili mix compliments the rest of the meal perfectly. The chicken takes on the soy glaze flavor very well, making everything blend in a delightful fashion
This meal was easy to cook. I liked the shortcuts in this meal, such as the microwaveable rice and the steaming of the broccoli in the microwave. I liked the addition of the cashews, but would like a way for that flavor to stand out more.
The fact that this is packed with protein and veggies and has two great sauces--basically perfection. I wasn't sure how I'd feel about this but the play of textures (nuts and crispy onions and crunchy broccoli) and flavors (sauces!!) is honestly better than I hoped. A new favorite.
Love the flavors of this dish, however I would only use one soy sauce package, two was a bit much.
Very good. I liked the cashews in the rice. The sauce was nice. Everything went well together.
Kids really liked this chicken and asked for it to be made again. I didn't do the cashew rice so it probably is even tastier if you go full force following the recipe.
Amazing!! Hope to see it again. I modified recipe and grilled the chicken so I was able to make this entire meal quickly without ever turning on the stove. Chicken breast were the largest I have received to date. Very filling.
We roasted our broccoli b/c steamed isn't a favorite for us. I also took another head of broccoli and added it to the portion HF sent - we need more veggies. It was excellent. I'm not a fan of pre-cooked rice, nor the plastic bag you warm it in - but that's on me - I should have looked more closely at the recipe before I selected this meal. I was primarily disappointed in the saucy chicken. It lacked depth of flavor. Sweet soy glaze is good and complex, but just glazing the chicken in it left something to be desired.
The cashew rice was yummy! The meal was quick and easy to make with steamed rice and steamed broccoli.
This was by far the best tasting and versatile thing in our packet. It was delicious in every way!
