• Adjust rack to middle position and preheat oven to 400 degrees. Bring a large pot of salted water to a boil. Wash and dry produce. • Cut each tomato into six wedges. Peel garlic; place in the center of a small piece of foil. Drizzle with olive oil and season with salt and pepper. Cinch into a packet.

Roast Tomatoes & Garlic

• Place tomatoes skin sides down on a lightly oiled, foil-lined baking sheet. Drizzle with olive oil and season with 1 tsp Tuscan Heat Spice (2 tsp for 4 servings), salt, and pepper. (You’ll use more Tuscan Heat Spice later.) Place garlic foil packet on same sheet. • Roast on middle rack until tomatoes have wilted slightly and garlic is softened, 20-25 minutes.

Boil Pasta

• Once water is boiling, add spaghetti to pot. Cook until al dente, 9-11 minutes. • Reserve ¾ cup pasta cooking water (1½ cups for 4 servings), then drain. Keep empty pot handy for step 5.

Cook Chicken

• While pasta cooks, pat chicken* dry with paper towels. Season with 1 tsp Tuscan Heat Spice (2 tsp for 4 servings), salt, and pepper. (You’ll use the rest of the Tuscan Heat Spice in the next step.) • Heat a large drizzle of olive oil in a large pan over medium-high heat. Add chicken and cook until browned and cooked through, 3-5 minutes per side. • Turn off heat; cover to keep warm. TIP: If your pan doesn’t have a lid, loosely cover with aluminum foil.

Make Sauce

• Once garlic is done roasting, carefully open foil and mash with a fork. • Melt 1 TBSP butter in pot used for pasta over medium heat. Add mashed garlic and remaining Tuscan Heat Spice. • Stir in cream cheese, half the Parmesan (save the rest for serving), 2⁄3 cup reserved pasta cooking water (1 cup for 4 servings), and 2 TBSP butter (3 TBSP for 4) until melted and combined. • Turn off heat; season with salt and pepper.

Finish & Serve

• Add drained spaghetti to pot with sauce; toss to thoroughly combine. (TIP: If needed, stir in more reserved cooking water a splash at a time until pasta is coated in a creamy sauce.) Season with salt and pepper. • Transfer chicken to a cutting board; slice crosswise. • Divide pasta between bowls. Top with chicken and roasted tomatoes. Sprinkle with remaining Parmesan and serve.

It was easy to follow; before too long I had my delicious Chicken over Garlic Parmesan Spaghetti with Tuscan Roasted Tomatoes. It was very good. The only criticism I offer has to do with the Tuscan spice. It was hotter than I expected and no disclaimer was made to cover that possibility. Otherwise, a tasty healthy meal!

Not a big roasted tomato fan so made the tomatoes into a sauce similar to the tomato herb sauce from the other chicken and spaghetti recipe. It was fabulous with the cheesy pasta. Added more garlic also. It was a great meal!!

This meal was absolutely delicious. This was one of the best I have had so far. I say this because I am not a huge tomato fan but this recipe gave that delicious spice with the chicken and pasta with the tomato adding that wonderful delicious cool flavor to the meal. Love this meal!

This was great the roasted tomatoes and creamy sauce make for a different dish thats really tasty. The timing of when to cook the chicken threw me off a bit because it was done a bit too early and ended up overcooking as it sat covered waiting for the rest. We will make this again! Was able to share this with our 4 yr old granddaughter too with the exception of the tomatoes. She doesnt like them. She gobbled it up!

The roasted tomatoes added a great flavor to the dish. The seasoning was perfect for both chicken and sauce. The noodles with the creamy sauce in the end was perfect. This meal was delicious.

The garlic was burnt roasting for the full 20 minutes, i recommend changing the recipe to 10 minutes for the garlic. I also breaded (with panko and seasoning) and baked the chicken and added a green pepper to roast with the tomato! Soooo goood!!!

Really good and light for a pasta dish. I enjoyed the roasted tomatoes a lot. They gave a fresh burst of flavor to the pasta. The chicken took longer to cook than the instructions said, but I'm not sure if I didn't have the heat high enough or if there was something else affecting the cook time.

This is another outstanding dish. I normally wouldn't eat cooked tomatoes but these were just right and well seasoned. The chicken was well seasoned and the sauce on the spaghetti was certainly different from tomato and fettucine sauce.

Will prepare again, pasta a very plain sounding prep that was delicious, next time, I'll roast a few more tomatoes, and garlic.. seasoning on chicken, and simplicity, great.
