
Bourbon in a salad? Sounds crazy, we know. But, don’t worry—you won’t be raiding your liquor cabinet for this meal! Naturally flavored with sea salt, spices, whiskey, and a hint of molasses, Brown Sugar Bourbon Seasoning brings sweetness and depth of flavor to pan-seared chicken. Softened kale is tossed with roasted carrots, dried cranberries, and crisp apple slices, then topped with sunflower seeds for crunch and a honey dijon drizzle to compliment the spiced bourbon chicken. • Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Trim, peel, and cut carrots on a diagonal into ½-inch-thick pieces. Toss on a baking sheet with a drizzle of oil, salt, and pepper. • Roast on top rack until lightly browned and tender, 20-25 minutes. • Let cool for 5 minutes before adding to salad in step 5.

• Meanwhile, remove and discard any large stems from kale; chop into bite- size pieces. Halve, core, and thinly slice half the apple (whole apple for 4 servings).

• Place kale in a large bowl and lightly season with salt. Using your hands, massage kale (similar to how you would knead dough), until leaves are tender, 30-60 seconds. TIP: To make kale even more tender, add a drizzle of olive oil along with the salt before massaging.

• Pat chicken* dry with paper towels and season all over with Brown Sugar Bourbon Seasoning, salt, and pepper. • Heat a drizzle of oil in a large pan over medium heat. Add chicken and cook until browned and cooked through, 5-7 minutes per side. • Transfer to a cutting board; let rest at least 5 minutes before slicing and adding to salad in step 6.

• Add cranberries, roasted carrots, and sliced apple to bowl with kale. Season with salt and pepper. • Reserve a half packet of honey Dijon dressing (whole packet for 4 servings) in a small bowl for serving. Drizzle salad with remaining honey Dijon dressing to taste; toss to combine.

• Thinly slice chicken crosswise. • Divide salad between bowls and top with chicken. Drizzle with reserved honey Dijon dressing. Sprinkle with sunflower seeds and serve.
Delicious!! I am definitely not a fan of kale but the combo of the honey mustard dressing, apples, cranberries and brown sugar bourbon actually made the kale taste really good! Good tip to massage the kale to soften, it really made a difference. Adding additional salt to the chicken prior to cooking though was a bit too salty. I will eliminate next time. I will DEFINITELY get this again!
Had this last night...Brown Sugar Bourbon Sauce was outstanding! Chicken, as usually was fresh and Delicious. Loved the Roasted Carrots, a little extra work, but paid off...nice touch!! The lettuce was good too...some salad kits we buy at the store are hit and miss.... We are trying to loose weight and that was a Calorie Smart meal we would have again
I thoroughly enjoyed this salad; probably more than any other salad I've ever had. I'm a big meat eater, so any salad I eat needs to have some good tasty protein. This hit the spot. The bourbon seasoning on the chicken went so well with the honey mustard dressing and dried cranberries.
At first I was not ready to give Kale a chance, but these delicious recipes have shown me how to prepare Kale and I find it very tasty. This salad uses the sweetness of the apples and dressing to balance the slight bitterness of the kale with the smokey flavor of the Bourbon chicken. This is a wonderful lunch recipe for the lovely Autumn season.
Fantastic flavor!! I never liked Kale until this salad.. and learning how to make it more tender. Brown Sugar Bourbon is a great flavor for chicken.
Loved the salad. One of us likes the brown sugar bourbon seasoning and one of us (me) thinks it lackeys the chicken too much, even at medium heat, so we cooked it with one seasoned and one not so each was happy
Sautee carrot lightly in olive oil with a clove of garlic. Add honey Dijon dressing to pan (one pack for 2 servings, 2 for 4 servings) and heat until bubbly hot. Pour over massaged kale for a delicious wilted salad. Add craisins, pumpkin seeds, and apple as directed.
Not really sure the purpose of roasting the carrot in this recipe was for. The texture was off when eatin with crunchy kale. Raw carrot slivers would have been fine. Also, do not salt and pepper the chicken in addition to the brown sugar bourbon seasonings. The first ingredient on the package is Salt.
Loved the Brown Sugar Bourbon seasoning for the chicken, but there wasn't enough kale for two full salads
First time having anything with the brown sugar bourbon seasoning - it was great! The flavors in this salad were perfect and this made of a great summer dinner.
