
Always raising the bar, this week, our chefs amped up pork chop flavors big time! Tender chops are coated in brown sugar bourbon seasoning (which is all kinds of savory-sweet), then cooked and topped with a buttery apple pan sauce. Crispy roasted broccoli and scallion-flecked mashed potatoes pair perfectly with the main event. Winner, winner, pork chop dinner!

• Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce. • Dice potatoes into ½-inch pieces. Place in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until tender, 15-20 minutes. • Reserve ½ cup potato cooking liquid, then drain and return potatoes to pot. • Keep covered off heat until ready to mash in step 5.

• While potatoes cook, pat pork* dry with paper towels. Season all over with Brown Sugar Bourbon Seasoning. • Heat a drizzle of oil in a large pan over medium-high heat. Add pork and cook until browned and cooked through, 4-6 minutes per side. TIP: If the pork begins to brown too quickly, reduce heat to medium. • Turn off heat; transfer pork to a plate. Wipe out pan.

• While pork cooks, cut broccoli into bite-size pieces if necessary. Toss on a baking sheet with a drizzle of olive oil, salt, and pepper. Roast on middle rack until lightly browned, 15-20 minutes. • Meanwhile, halve, core, and dice apple into ¼-inch pieces. Trim and thinly slice scallions, separating whites from greens.

• Melt 1 TBSP butter (2 TBSP for 4 servings) in pan used for pork over medium-high heat. Add apple and scallion whites; season with salt and pepper. Cook, stirring occasionally, until golden, 4-6 minutes. • Stir in stock concentrate, ½ cup water (¾ cup for 4), and ½ tsp sugar (1 tsp for 4). Cook until sauce has thickened and apple is tender, 5-7 minutes. • In the last 2 minutes, return pork to pan until warmed through. Season with salt and pepper. Turn off heat.

• Mash potatoes until mostly smooth. • Stir in scallion greens, sour cream, 1 TBSP butter (2 TBSP for 4 servings), and a splash of reserved potato cooking liquid. Season with salt and pepper. TIP: If needed, add more potato cooking liquid a splash at a time until potatoes are smooth and creamy.

• Divide pork, mashed potatoes, and broccoli between plates. Top pork with apple pan sauce and serve.
Pork is fully cooked when internal temperature reaches 145°.
Awesome, can't go wrong with this one. I love the brown sugar bourbon flavor with the pork chops and it has actual apples in it!! The scallion mashed potatoes, I had no idea you could do that to mashed potatoes before HelloFresh. I love it. This is the definition of comfort food.
Really tasty but a lot of bourbon brown sugar mixture sticks to pan, making sauce bitter if same pan is used. The apple addition is very tasty
This was a tasty recipe. I added bourbon and brown sugar to the sauce to help fortify the flavor. Very similar to a drunken applesauce recipe I use often for pork. The McCormick spice blend was nice. I'm not necessarily going to buy it again, but only because I have other sources for my spice mixes...
This was absolutely delicious! We all loved it and our daughter had fun helping make the mashed potatoes. I only used one of the packets of the Brown Sugar Bourbon seasoning as I have used it in the past and it was a bit too much for me. But then I was able to replicate this recipe last week and had the main thing that makes this recipe what it is. Also, I added more green onions and some extra brown sugar. Delish!
The brown sugar bourbon seasoning with the apples, scallion and stock was great. I suggest you have people only cook any pork chops 4 to 5 minutes. 6 minutes makes them dry. Also always peel the potatoes. The skin doesn't cook up well with little white potatoes.
Medium high is too hot to cook the pork chops. As soon as the brown sugar hits the pan, it's burnt. Too late to turn down the heat. The apple sauce was nice. The potatoes were excellent. I no longer roast the broccoli, because the tops taste burnt. I steam it.
These pork chops were delicious & the apples were a perfect accompaniment! We love the brown sugar bourbon seasoning! The mashed potatoes had a wonderful savory flavor!
We like this and even do the pork chops on the grill. Tenderize them with an infused vinegar and oil, rub in the Brown Sugar Bourbon and grill till perfection. Chops come out very flavorful and juicy.
This one was one of my favorites so far. The flavor of the brown sugar seasoning soaked into the pork chop and the apples. There was so much sauce left that I put that on the potatoes and it tasted so good.
I adjusted the recipe a little bit. Added 1/4 cup shredded cheese to the mashed potatoes. Everything was delicious. The pork chops with apples and green onion - delicious!!
