• Adjust racks to top and middle positions; preheat oven to 425 degrees. Wash and dry produce. • Cut potatoes into 1⁄2-inch-thick wedges. Mince a few pickle slices until you have 1 TBSP (2 TBSP for 4 servings). • Toss potatoes on a baking sheet with a large drizzle of oil, half the garlic powder (you’ll use the rest in the next step), salt, and pepper. Roast on top rack until golden brown and crispy, 20-25 minutes.

• Meanwhile, in a large bowl, combine beef*, cheddar, panko, stock concentrate, remaining garlic powder, and 1 TBSP water (2 TBSP for 4 servings). Season with salt (we used 1⁄2 tsp; 1 tsp for 4) and pepper. • Form mixture into 10 11⁄2-inch meatballs (20 meatballs for 4). • Place meatballs on a second lightly oiled baking sheet. • Roast meatballs on middle rack until browned and cooked though, 12-15 minutes.

• While meatballs roast, in a small bowl, combine minced pickle, mayonnaise, mustard, and ketchup. • Divide special sauce between two small serving bowls (four bowls for 4 servings).

• Divide potato wedges, meatballs, and remaining pickle slices between plates. Serve with special sauce on the side for dipping.

This recipe is a great alternative to the classic firecracker meatballs, but as I was going through the recipe it felt like something was missing. I had a spare onion so I made a batch of meatballs as instructed but another batch with diced onion and pickles, and the cheeseburger flavor felt more complete with those included. I think including 1 onion or shallot for both the meatball mix and the sauce would really tie the recipe together.
This was a really flavorful meal. I misread some instructions and combined too much so I ended up making a cheeseburger bowl with the fries on bottom, meatball mixture ( plus everything for the sauce), and topped with lettuce. It was delicious.
The fries were so great with this meal! The addition of garlic was a plus! The meatballs with the sauce were also so tasty!
These meatballs were fantastic. I never made meatballs like this before but I will definitely make them again. And I never made french fries using fresh potatoes before either. Such a great meal. We didn't make the dip mixture because my husband and son don't like mayo or mustard but I dipped mine in ketchup and they dipped in bbq sauce. It was a hit!!!

These meatballs were delicious and the potatoes too! The pickles were ok, but we had other pickles at home to supplement with, so overall, it was a great meal.
