
For this 30-minute weeknight meal, perfectly seared chicken pairs with zucchini and spinach in a silky sauce of Greek yogurt, garlic, and freshly grated Parmesan. Served over hearty grains, it's restaurant-quality comfort food that's packed with wholesome, satisfying veggies.

Wash and dry produce.
Trim and halve zucchini lengthwise; slice crosswise into ½-inch-thick half-moons. Peel and mince garlic.

Pat chicken* dry with paper towels; season all over with half the Italian Seasoning (you’ll use more later), salt, and pepper.
Heat a drizzle of olive oil in a large pan over medium-high heat. Add chicken; cook until browned and cooked through, 5-7 minutes per side. TIP: Lower heat if chicken begins to brown too quickly!
Turn off heat; transfer to a cutting board. Wipe out pan.

Heat a drizzle of olive oil in same pan over medium-high heat. Add zucchini; season with salt and pepper. Cook, stirring, until softened and lightly browned, 5-7 minutes (7-10 minutes for 4 servings).
Add garlic and cook, stirring, until fragrant, 30-60 seconds.

Reduce heat to medium low; stir in yogurt, remaining Italian Seasoning, ¼ cup water, and 1 TBSP butter (½ cup water and 2 TBSP butter for 4 servings). Cook, stirring constantly, until mixture has thickened, 2-4 minutes.
Grate Parmesan directly into pan; cook, stirring constantly, until melted and combined, 1-2 minutes more.

Stir spinach into pan with zucchini mixture. Cook, stirring, until wilted, 3-4 minutes.
Meanwhile, gently massage grain blend in package to break up grains. Partially open package; microwave until warmed through, 1½-2 minutes.
Transfer grain blend to a medium bowl. Fluff grains with a fork; season with salt and pepper.

Slice chicken crosswise.
Divide grain blend between shallow bowls; top with chicken. Spoon sauce over chicken and serve.
This is my own fault for having higher expectations for the spinach parmesan sauce... there was nowhere near enough of it, and while I appreciated being able to grate real parmesan into the sauce, it ended up kind of disappearing into the veggies which ended up rather gloppy. I was expecting a thicker, more velvety-textured sauce and that was not at all what happened, so the grains were largely plain (boring) and even though the chicken was moist and seasoned with the Italian seasoning, it was overall just very bland. Not a fan, will not make again.
This was delicious and I'd order again! I wish the instructions called for two pans, and cooking the chicken at the same time as the veggies because the chicken was cold even though I tented it with foil.
Chicken poorly trimmed and not great quality, not enough chicken for two people. Spinach had to be picked through carefully, a lot of pieces were half rotten and slimy. (Maybe froze in transit?) Zucchini was small, so between limited spinach and zucchini, not enough spinach parm sauce or vegetables. Overall taste of what there was was very good.
The chicken and zucchini/spinach/parmesan mixture were delicious and very easy to make. I was disappointed with the grain blend. It was super easy to make, but tasted dry and bland. This meal would have been better with potatoes.
The sauce was great. The mixed grains were a little dry. If I made this again, I'd start the chicken first. There was a lot of waiting around time while the chicken cooked.
I absolutely loved this meal and the kids didn't cry about eating spinach at dinner!
Very good, but not enough sauce to spoon over chicken. So, chicken was slightly dry.
The sauce was not creamy as shown using ingredients provided. Added some sour cream to help.
Could have been user error, but the sauce wasn't a sauce. Love the healthier grains and veg with a lean protein!
Everything was delicious. However I would suggest more cream as the zucchini mix was not as creamy
