• Wash and dry produce.
• Dice tomato into ¼-inch pieces. Quarter lemon. Roughly chop cilantro. Drizzle tomato with olive oil and season with salt and pepper to taste.
• Massage grain blend in package; partially open top. Pat chicken dry with paper towels; season all over with salt and pepper. Slice chicken crosswise and place on a microwave-safe plate; cover with plastic wrap. Microwave grain blend and chicken until heated through, 2-3 minutes. (Microwave in batches for 4 servings.) Fluff grains with a fork and season with salt.
• Meanwhile, in a small bowl, combine crème fraîche, mayonnaise, half the garlic powder (all for 4 servings), juice from one lemon wedge (juice from two lemon wedges for 4), and a pinch of salt and pepper. Add water 1 tsp at a time until mixture reaches a drizzling consistency.
• Divide grain blend between bowls. Top with chicken, marinated tomato, and garlicky white sauce. Sprinkle with cilantro and serve with remaining lemon wedges on the side.
I made per your recipe (for two people) and it was ok. Then I made the rest on a different day and first sauteed red onion, a small banana pepper, and garlic, added the grains after steaming them and added the chicken (diced). This version was much more flavorful. I loved the ease of making this recipe, but you could enhance it. Thanks.
Fabulous meal, very easy to prepare! Quality chicken, flavorful grain bowl.
Loved the grain bowl. I added broccoli florets to the bowl to make it a more complete meal.
The directions were unclear when preparing the grains whether it was supposed to be in the pouch still or already on the plate. I kept it in the pouch and it turned out fine, but it wasn't clear until you read on in the instructions.
Added some spare scallions I had on hand and subbed garlic powder for fresh garlic. EXCELLENT lunch, even packed to go.
This was so flavorful and yummy! Super quick and I know it was listed as a lunch, but it made a great dinner!
Amazingly delicious. Took me by surprise how good this meal was, will definitely put this on my menu again.
I wasn't quite sure what to expect of this meal, and after making it the jury was still out, but I had leftovers a couple days later, and it was really quite tasty--would order again!
This was delicious and super easy. Used it for a quick meal in the evening instead of lunch. I had some cucumber at home that I added and it was nice with both cucumber and tomatoes.
This was convenient to make but not very flavorful. Couldn't taste the garlic in the sauce at all, sauce was way too creamy and bland and unappealing with the chicken and rice. Would be good with a different sauce with more flavor.
