When the kids get hangry, you need something on the table STAT and we’ve got just the thing: a 15-minute kid-approved sammie—plus dips. You’ll assemble grilled cheese sandwiches on garlicky flatbread (similar to a pizza crust) and cook until golden and melty. Cut into squares perfect for little hands, and serve along with cucumber rounds, carrot sticks, mandarin orange segments, and chocolate chips. The best part of all? Three (three!) sauces for a dippin’ good time: savory marinara, good ol’ ketchup, and smoky-sweet barbecue. Less time shopping, prepping, and cooking = more time for you and yours.
1 unit
Cucumber
9 ounce
Carrots
3 unit
Mandarin Orange
1 teaspoon
Garlic Powder
2 unit
Flatbreads
(Contains: Wheat, Sesame)
½ cup
Cheddar Cheese
(Contains: Milk)
3 ounce
Semisweet Chocolate Chips
(Contains: Soy)
2.5 ounce
Marinara Sauce
2 unit
Ketchup
1 ounce
BBQ Sauce
1 tablespoon
Olive Oil
2 tablespoon
Butter
(Contains: Milk)
Wash and dry produce. Thinly slice cucumber into rounds. Trim, peel, and cut carrot into sticks (like fries; ours were 3 inches long and ⅓-inch thick). Peel and separate mandarin oranges into segments if desired (or simply pack whole in lunch bags to peel later!).
In a small bowl, whisk together garlic powder and 1 TBSP olive oil (2 TBSP for 6 servings). Place flatbreads on a clean work surface. Brush tops of flatbreads with as much garlic oil as you like. Evenly sprinkle one flatbread (two for 6) with cheddar. Top with remaining flatbread, oiled side down.
Melt 2 TBSP butter in a large, preferably nonstick, pan over medium heat. Add flatbread sandwich to hot pan and cook until flatbread is golden and cheese melts slightly, 2-3 minutes per side. (Work in batches for 6 servings, adding an additional 2 TBSP of butter to pan between batches.) Transfer to a cutting board. Cut flatbread grilled cheese into 9 even squares (18 squares for 6).
To serve: Divide grilled cheese squares, cucumber rounds, carrot sticks, mandarin segments, and chocolate chips between plates. Serve with marinara, ketchup, and or barbecue sauce on the side for dipping. To stash: Let grilled cheese squares cool completely. Refrigerate grilled cheese squares, cucumber rounds, carrot sticks, mandarin segments, chocolate chips, and dipping sauces in separate containers and pack as desired!
While it was kid friendly, it arrived with zero instructions. The carrots had multiple blemishes and were broken pieces of whole, where I would have preferred either whole proper (clean, unsplit, unrotted) or baby carrots. The sauces that came with are confusing, as they don't go with anything directly. Chocolate semisweet chips are a strange "treat" and will instead be reused for other recipes.
These need more cheese, I had to add four slices of American on top of the shredded cheese...then they were very good! Can confirm: Kid approved.
Not sure where the ketchup fits in here, but this shouldn't be a kids meal, wife and I full grown adults loved all of it!
Healthy and quick to prepare. Fun for kids to make.
This was really easy & fun to make for our little one. She enjoyed every bit of it!
More kid lunch options/boxes please!!! My 10 year old doesn't like eating cafeteria food at school & these have been a lifesaver for her to make her own lunches to take to school!
Love this lunch. Never thought to have it but it was super easy and delicious.
Tasty options but the cheese was lacking and the flatbreads burned a little too quickly. I think it would be better with a fluffier bread.
Kids liked it but the cucumber was so wilted it had to be tossed.
Three year olds loved the sandwich- had to supplement as produce was bad
