Wash and dry produce. Line a large plate with parchment paper. Peel mandarin oranges and separate into segments. Halve, core, and thinly slice apple. Halve grapes if desired.
Place half the chocolate chips in a medium microwave-safe bowl. Microwave until chocolate has melted, 60-90 seconds. Lightly season with salt. Stir until smooth. Dip one end of each mandarin segment in melted chocolate and lay flat on parchment-lined plate. TIP: Leftover melted chocolate? Dip guava crackers and add them to the plate with the mandarins! Refrigerate chocolate-dipped mandarins until ready to serve.
Meanwhile, in a second medium bowl, whisk together ricotta, crème fraîche, 2 tsp olive oil, and a pinch of salt and pepper. In a small bowl, stir together fig jam and 1 tsp water. Transfer creamy ricotta to a serving bowl and spread top out in an even layer. Drizzle with fig jam.
Place bowl with figgy ricotta in center of a large board or platter. Cut Grand Cru cheese into two triangles. Divide Grand Cru, Gran Beretta, grapes, and apple slices around board. Divide Craize Guava toasted snack crackers and Craize Sweet Corn toasted snack crackers into small piles around board. Fill remaining gaps on board with chocolate-dipped mandarins and remaining chocolate chips. Serve.
