
No need to be chicken about making this delicious, saucy meal. Crispy chicken cutlets are drizzled with an umami-packed sauce of apricot jam, miso broth, lime juice, and butter. On the side, there’s fluffy, aromatic ginger rice, plus roasted carrots tossed with lime zest. Talk about a weeknight dinner worth hatching out!

• Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Trim, peel, and cut carrots on a diagonal into ½-inch-thick pieces. Peel and mince garlic. Peel and mince ginger until you have 1 TBSP (2 TBSP for 4 servings). Trim and thinly slice scallions, separating whites from greens. Zest and quarter lime.

• Toss carrots on a baking sheet with a drizzle of oil, salt, and pepper. Roast on top rack until browned and tender, 20-25 minutes. • Meanwhile, melt 1 TBSP butter in a small pot over medium-high heat. Add garlic and half the minced ginger; cook, stirring, until fragrant, 30 seconds. • Add rice, ¾ cup water (1½ cups for 4 servings), and a big pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. • Keep covered off heat until ready to serve.

• While rice cooks, pat chicken* dry with paper towels and season all over with salt and pepper. • Heat a drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add chicken and cook until browned and cooked through, 3-5 minutes per side. • Turn off heat; remove from pan and set aside. Wipe out pan.

• Heat a drizzle of oil in same pan over medium heat. Add scallion whites and remaining minced ginger; cook, stirring, until fragrant and softened, 1 minute.

• Add stock concentrate, half the jam (all for 4 servings), ¼ cup water (1⁄3 cup for 4), and a squeeze of lime juice to pan with aromatics. Cook, stirring, until combined and thickened, 3-4 minutes. • Remove from heat; stir in 1 TBSP butter (2 TBSP for 4) until melted. Taste and add more lime juice if desired.

• Fluff rice with a fork and season with salt. • Toss carrots with lime zest. • Divide rice, carrots, and chicken between plates. Drizzle chicken with sauce and sprinkle everything with scallion greens. Serve with any remaining lime wedges on the side.
This was so yummy! HF really knows how to make a good sauce! This miso apricot sauce is so good! Pairs so well with the zesty carrots (lime zest, salt and pepper) and the garlic ginger rice! The prep really didn't take long! And finally got a good bunch of carrots from HF and not the usually floppy sad carrots I usually get! If this meal came up on the menu I'd get it again!
I really liked this one! Miso is an ingredient I had never used in my cooking before. Love those zesty carrots with grated lime peel. Rice with both garlic & ginger was new to me. Really good. Thank you!
The meal was good but the chicken was a little bland. The carrots were tasty as always. The garlic ginger rice had a nice flavor. I think the chicken would have tasted better if there had been more miso and apricot flavoring.

Amazing! As always, make the portions larger. Add more garlic. Some scrumptious flavors here! Please offer this again. I loved the lime zest, garlic ginger, miso veggie stock, apricot, carrots. This is one of the best recipes for sure! Oh! The only thing I would add would be a fresh Thai chili... add some spice and it would perfectly complement the meal.
The carrots were AMAZING, especially with the lime zest. The ginger rice is lovely and chicken is sweetened with the apricot sauce. Very interesting flavor combination in the best of ways.
Right off the bat, this recipe made my whole house smell AMAZING. The mix of fresh ginger and garlic sautéing is one of my favorite kitchen smells. I might be addicted to these carrots. And the sauce that goes over the chicken. And the rice. Hell this whole dish. It's bright and this really deliciously intriguing blend of savory and sweet. Definitely adding this to the favorites list. It's SO GOOD.
This was delicious! The carrots have a nice zing with the lime zest and the meal was very easy to put together. The apricot jam gave a nice slightly sweet taste to the chicken & rice...would order again!
Tastes amazing, the apricot miso drizzle blows this dish out of the water. When cooking the rice, make sure it's simmering, because if you leave the heat above a simmer, the water will evaporate too quick and the rice will be crunchy. Only downside is the carrots' varying diameter made some smaller pieces burn in the oven.
This meal was very tasty, I think the miso and the ginger complemented each other and the apricot very nicely. It was a cool change to have lime instead of lemon. Overall a tasty dish
