Love prep and bake dishes like this one. Give me chicken breast, potatoes, and veggies made easy and tasty and I'm sold. However, please give me options besides green beans... You all give me way too many green beans. At least let me swap it for broccoli, but I'd love the option to always swap it for Brussels or asparagus too.
This was better than the aluminum tray meal last week with the pre-cooked potatoes and BBQ chicken. The ranch chicken was good. The microwave potatoes were good, but we ate them before the rest of the meal... something was off with the cook time on the chicken and green beans. I preheated the oven to 425 as instructed, but after 25 minutes, the chicken wasn't done. It didn't reach 165 degrees until it cooked for 40 minutes! Even after 40 minutes, some of the green beans were still crunchy (which I didn't mind, but this isn't normal). I don't think I'll be ordering the aluminum tray meals anymore since it's been either a disappoint in terms of flavor (last week's BBQ chicken) or improper cook times (this week's ranch chicken).
I love how easy this recipe is! I wish the Ranch flavoring was better. It seems to be have lots of dill and I don't use all that is sent as it is too strong for my liking.
The green beans didn't cook enough when the chicken was done. If there is a next time will scrap the pan and use a cookie sheet, so the chicken and green beans bake separately.
