Roast Potatoes

• Adjust racks to middle and top positions and preheat oven to 425 degrees. Wash and dry produce. • Halve potatoes lengthwise. • Toss potatoes on a baking sheet with a drizzle of oil, salt, and pepper. Roast on middle rack until browned and tender, 20-25 minutes.

• Meanwhile, trim and discard woody bottom ends from asparagus. Pick and roughly chop fronds from dill. Zest and quarter lemon.

• Toss asparagus on one side of a second baking sheet with a drizzle of oil, salt, and pepper. • Pat trout* dry with paper towels. Place in a large bowl with a drizzle of oil, dill, lemon zest, and juice from two lemon wedges, salt, and pepper (use a large drizzle of oil and juice from four lemon wedges for 4 servings). Rub to coat. • Place trout, skin sides down, on empty side of sheet. Top each fillet with 1 TBSP butter. • Roast on top rack until trout is opaque and cooked through and asparagus is browned and tender, 10-12 minutes.

• Divide trout, potatoes, and asparagus between plates. Serve with remaining lemon wedges on the side.

Trout is fully cooked when internal temperature reaches 145°.

Great meal. I used my air fryer for the potatoes and trout. The trout was moist and well seasoned. I steamed the asparagus in my rice cooker and it also came out perfect. This is my first meal with Hello Fresh. I enjoyed preparing it as well as eating this meal.

This dish was a bit boring. The dill on the trout was a nice addition, but there were no complex flavors. Adding a sauce (maybe a lemon dill cream sauce drizzle) or other seasonings would help liven up the plate.

Everything was perfectly cooked and pretty easy to prepare. Glad we tried the trout-it had a nice flavor, similar to salmon. I let the potatoes cook ten minutes longer to make them extra crispy. Win!

This is probably my most favorite meal so far! It had 2 of my favorite ingredients, which is trout and asparagus. By adding the dill to the trout just made it even better. Thanks for this meal! I will order it again

This was a new to me fish so I looked it up. Recommendations for preferred cooking method was steaming since it is a soft fish. I seasoned with salt and pepper, topped with garlic butter and lemon slices, wrapped in foil and baked at 375* for 20 min. I served it with mashed sour cream potatoes and the asparagus, also steamed. Delicious.

I was pleasantly surprised by the taste of the steelhead trout. Reminded me a lot of salmon. The dill and lemon butter were a perfect enhancement and not too overpowering.
