Cooking Steps

1

• Wash and dry produce. TIP: Thoroughly pat lettuce dry before assembling salad.

2

• Pat chicken dry with paper towels. Thinly slice crosswise into strips and place in a large microwave-safe bowl. Add a drizzle of oil, half the Fajita Spice Blend (all for 4 servings), salt, and pepper; stir to combine.

3

• Cover with plastic wrap; microwave until chicken is warmed through, 90 seconds.

4

• Meanwhile, trim and discard root end from lettuce; roughly chop. Dice tomato into ½-inch pieces.

5

• Place lettuce, tomato, and chicken in a second large bowl; crush half the tortilla chips over top. Drizzle with as much dressing as you like; toss to combine.

6

• Divide salad between shallow bowls and serve with remaining tortilla chips on the side.

Review summary

Updated on Dec 2025
  • Flavor: Many enjoyed the tasty combination, though some found the honey mustard dressing an odd choice for Southwest flavors.
  • Ease of prep: Customers loved how quick and easy this salad was to assemble, perfect for a busy workday lunch 🥗.
  • Suggestions: Add corn, black beans, avocado, or cheese to make it heartier; consider offering a spicier dressing option.
  • Portions: Some felt the lettuce and dressing amounts were insufficient for two servings.
  • Chicken: While convenient, a few found the pre-cooked chicken dry or rubbery; consider offering raw chicken as an option.

Love the southwest spice on the chicken and the chips add a nice crunch.

Not sure why you would add honey mustard dressing to a southwest salad...the spices did not blend well with the honey mustard. Luckily I had a pack of ranch dressing and some left over guacamole and made avocado ranch dressing. With the right dressing, it was fabulous.

Nice, fresh, easy dinner on a hot day. I would have liked grape tomatoes instead of Roma as they taste better. Also would have liked guacamole with salad.

I added sautéed onions & peppers to the fajita chicken. We used salsa as dressing. Seemed to make more sense than honey mustard. We liked this one.

I was pleasantly surprised! I wasn't sure how the pre cooked chicken would taste. It was really good and the best part, the whole meal was super easy! The only negative, I wish here was more dressing.

needed another ingredient such as black beans or avacado I added roasted corn - honey mustard dressing was pleasant, but would have preferred something more southwest.
