• Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Peel and dice sweet potatoes into 1⁄2-inch pieces.

• Place sweet potatoes in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until tender, about 15 minutes. • Drain and return sweet potatoes to pot. Keep covered off heat until ready to mash.

• Meanwhile, in a small bowl, combine panko, cheddar, half the Fry Seasoning, a drizzle of olive oil, salt, and pepper. • Pat chicken* dry with paper towels and season all over with remaining Fry Seasoning, salt, and pepper.

• Place chicken on one side of a baking sheet; brush tops with half the sour cream (you’ll use the rest in the next step). Mound coated sides with panko mixture, pressing to adhere (no need to coat the undersides). • Toss green beans on empty side of sheet with a drizzle of olive oil, salt, and pepper. • Roast on top rack until chicken is cooked through and green beans are browned and tender, 9-12 minutes.

• Meanwhile, mash sweet potatoes with 2 TBSP butter (4 TBSP for 4 servings), remaining sour cream, and a big pinch of salt. Keep covered until ready to serve. TIP: If you like your sweet potatoes extra-sweet, add a pinch of brown sugar or a drizzle of maple syrup while mashing.

• Divide sweet potatoes, green beans, and chicken between plates. Serve.
Chicken is fully cooked when internal temperature reaches 165°.
Mercy, this was a keeper. The cheesy crust on top got crunchy in the oven, and we fought over who would get it. The chicken was moist and so flavorful. Roasted green beans were a revelation to us, and I'll roast them from now on. The sweet potatoes were tiny so I added one large one. All in all, this was a fabulous meal. As is the case so frequently, many of these meals are a little bit off the beaten path for me but I'm discovering many new flavors and textures that are delightful. These meals are fresh and so delicious!
3 very good meals. I love smashed sweet potatoes but this time I decided to make things easier for me, especially cleanup, so I diced the Sweet Potatoes into bite sized pieces and pan roasted with the chicken & green beans. I cut chicken into bit sized pieces, coated in a dish with the Sour Cream, Fry Seasoning & Panko. After all had roasted for 10 minutes, I put the Cheddar on top of chicken & finished roasting. Easier to plate & cleanup and all tasted REALLY good.
The cheddar crusted chicken was amazingly tasteful! The mashed sweet potatoes were so good. I added the suggested brown sugar and honey for sweetness. My green beans weren't all that but the chicken was the Rockstar so it didn't even matter.
I love the roasted green beans and crusted chicken. However I would only add half as much butter to the sweet potato mash since the amount of butter had in this recipe almost makes the sweet potato mash too runny.
Loved the cheesy Panko topping on the chicken. The sour cream made the chicken very moist and juicy. Mashed sweet potatoes are always a hit. Would like to have more customizing of the vegetables. Kind of tired of green beans all the time.
The chicken was AMAZING. The green beans got overcooked by being started the same time as the chicken, so I'd do that differently next time, and this was my first time trying sweet potato mashed potatoes, and I'm not really a fan, I'm glad I tried it though. Next time I'd probably make the sweet potatoes into potato wedges instead of mashing them.
The cheddar crusted chicken was a huge hit with my 7 & 11 year old! The green beans were favored by mostly by the adults though the kids did enjoy them. I recommend them to be trimmed or at least stems removed that was not on the recipe sheet. The mashed sweet potatoes were an adult favored side my kids not so much.
Usually don't like cooking chicken because it doesn't turn out right, but this was so tasty! The sweet potato mash was delicious as well. I think the instructions should encourage cutting off the stringy ends of the green beans.
