
There’s nothing more comforting than a warm bowl of soup. Not just any soup will do, though—this sweet and creamy pumpkin bisque happens to be extra special. It’s blended with cream and pumpkin and sweet potato purees, plus a medley of warming spices. We wouldn’t leave you hanging without a little crunch: You’ll whip up grilled cheese sammies, cut them into square “croutons,” and toss them on top. Creamy Pumpkin Bisque

Cooking Oil
Spread sourdough with garlic herb butter; place on a clean work surface, buttered sides up. Evenly top half the bread slices with 3-4 slices of cheddar. Top with remaining bread slices, buttered sides down.
Heat a drizzle of oil in a large pan over medium heat. Add sandwiches and cook until bread is golden and cheese melts, 2-3 minutes per side. (Work in batches if necessary.)
Cut into small squares, similar to croutons.
RECOMMENDED: Bring a large pot of water to a boil. Place sealed bag of soup in pot; cook for 20 minutes, then carefully remove. (Caution: Bag will be very hot.) Cut one corner of bag with scissors and pour soup into a serving bowl.
MICROWAVE ALTERNATIVE: Cut one corner of bag; pour soup into a microwave-safe container. (Do not microwave in cup.) Cover loosely with microwave-safe plastic wrap or a paper towel. Microwave, stirring halfway through, 5-6 minutes. (Caution: Container and soup will be very hot.)
Dip grilled cheese croutons into soup.
The pumpkin bisque was creamy, savory, and had hints of nutmeg and cinnamon. I loved it and it was a hit with the husband too, which was a surprise. I turned the grilled cheese croutons into regular grilled cheese sandwiches for the convenience, and they were also delicious.
The Garlic herb butter on the grilled cheese is phenomenal. I want to do those for every grilled cheese I ever eat. It would be great to incorporate that into a loaded grilled cheese meal like with avocado and tomato, or meats for non-vegetarians. The bisque and actual grilled cheese were great as well but that butter put it over the top.
This soup was amazing! Please offer it regularly (not just seasonal)! Grilled cheese turned out very tasty too, with the garlic herb butter.
This soup is really delicious, especially if you pair it with grilled cheese, & top the soup with pepitas.
This was a pleasant surprise.. much better than I thought. Hubby liked it which is a surprise because he is not into "creamy". The mix of flavors was delightful.

Loved the big portions and the idea of this. The pumpkin bisque is a little sweet for my taste. Maybe another type of squash bisque would work better.
This is a super fast easy meal. I really enjoyed that. The pumpkin was not my most favorite flavor but all in all it turned out well.
The grilled cheese part of this was amazing. The pumpkin bisque was ... very pumpkiny. I should have expected that but for some reason it hit me a little too hard. I also wasn't expecting chunks of pumpkin and that threw me off. Overall it was super tasty with the grilled cheese but I think I'll just take grilled cheese with a tomato bisque.
