Cooking Steps

Prep
1
  • Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce.

  • Trim green beans if necessary.

  • In one oven-ready tray, toss green beans with a drizzle of oilhalf the garlic powder (you’ll use the rest in the next step)salt, and pepper. (For 4 servings, divide between two trays.)

  • In a small bowl, combine pankosesame seeds1 TBSP olive oil (2 TBSP for 4), a pinch of salt, and pepper.

Roast Chicken & Green Beans
2
  • Pat chicken* dry with paper towels and season all over with remaining garlic powder, salt, and pepper. Arrange in remaining oven-ready tray (for 4 servings, divide between two remaining trays).

  • Brush tops of chicken with mayonnaise; mound with panko mixture, pressing firmly to adhere (no need to coat the undersides).

  • Roast tray with green beans and tray with chicken side by side on middle rack (be sure your oven has preheated!) until green beans are tender, topping is golden brown, and chicken is cooked through, 20-25 minutes. (For 4, roast chicken on top rack and green beans on middle rack.)

Heat Rice
3
  • When chicken has 5 minutes left, empty rice into a medium microwave-safe bowl (breaking up rice with your hands). Add 3 TBSP water (6 TBSP for 4 servings). Cover tightly with plastic wrap; microwave until rice is warmed through and tender, 1½-2 minutes.

  • Fluff rice with a fork. Stir in 1 TBSP butter (2 TBSP for 4); taste and season with salt and pepper if desired.

Serve
4
  • Divide chickengreen beans, and rice between plates in separate sections. Top chicken with spicy mayo and serve.
