
In our humble opinion, snacktime is the best time of the day. To help make your snacking extra snack-tacular, we’re sending deliciously flaky empanadas filled with seasoned chicken and veggies, and mini beef franks wrapped in bagel dough. Plus, for a little freshness, we tossed in a crisp cucumber and a juicy orange! All you have to do is bake the empanadas and bagel dogs, slice up the cuke and orange, and share! We also sent ranch for dipping, but feel free to add your favorite condiments into the mix. Keep calm and snack on!

Chicken Empanadas

Adjust oven rack to top position and preheat oven to 425 degrees (skip if using an air fryer!). Wash and dry produce.
Trim and thinly slice cucumber into rounds. Halve orange; slice into 1-inch-thick half-moons.
Line a baking sheet with parchment paper (or foil). Remove plastic from bagel dogs and place on one side of prepared sheet. Add empanadas to empty side. Bake on top rack until golden brown, 8-10 minutes. AIR FRYER ALTERNATIVE: Coat an air fryer basket with nonstick cooking spray. Arrange bagel dogs and empanadas side by side in basket. Coat tops with cooking spray. Air fry at 375 degrees until golden brown, turning halfway through, 10-12 minutes. (You may need to work in batches!)
Place dressing in a small bowl; place in center of large board or platter. Arrange bagel dogs, empanadas, cucumber, and orange in separate sections around dressing.
RECIPE SUGGESTION (Additional ingredients not included.) Include more of your kid’s other favorite dippers! We like ketchup and honey mustard.
Yes! We love a snack board-this was PERFECT for the early dismissal snow day we had. My kids gobbled it up while they did homework.

The two premade items, the bagel dogs and the chicken empanadas, warm in the oven at different temps. It would be a lot easier if they able to be warmed at the same time.
There was not cucumbers and oranges compared to the empanadas and bagel dogs. Also the smaller oranges or "cuties" would have been a better choice than an orange. Easier to peel and split.
The cucumber was spoiled on arrival, but the dogs and empanadas were very good. We dipped them in nacho cheese sauce, yummy
Bagel dogs were a bit dry but I think I overcooked them
I am enjoying these meals. The meat surrounded by pastry just didn't get the job done. Too small. Looks very appetizing. Not much flavor.
Kiddo doesn't like the cucumber, a substitute would be great.
