
Bulk up your HelloFresh meal with this side bundle and have herby and tangy roasted carrots with any meal. We especially love these roasted carrots, tossed with pesto and feta cheese, alongside chicken, salmon, and pork chops, but they’re delicious paired with any dish. Baby Carrots
2 ounce
Pesto
(Contains: Milk)
2 ounce
Feta Cheese
(Contains: Milk)
2 teaspoon
Olive Oil
Salt
Pepper
Adjust rack to top position and preheat oven to 425 degrees.
Toss carrots on a baking sheet with a large drizzle of olive oil, salt, and pepper.
Roast on top rack until tender, 20-25 minutes.
Once carrots have finished roasting, toss with pesto and feta cheese.
Recipe Suggestion (Additional ingredients not included.) Sprinkle roasted carrots with pesto and feta with toasted almonds.
Just didn't work as well as I'd hoped. The pesto wasn't very flavorful and the feta mixture would not stick to the carrots.
Why haven't I thought of this recipe before? Very yummy.
