• Wash and dry produce. Halve buns crosswide. • Heat 2 TBSP butter (4 TBSP for 4 servings) in a large pan on medium-low heat. Once butter has melted and covers the whole pan, place buns, cut sides down, in pan used for patties over medium-low heat. Toast, pressing down with a spatula, until golden brown, 1-2 minutes. Remove from pan and set aside.
• Heat a drizzle of oil in the same pan used for buns. Add chicken and heat, until chicken is warmed through, 2-3 minutes per side. • Snip open a corner of the BBQ Sauce and drizzle onto chicken; flip and drizzle sauce onto the other side. Top each chicken breast with cheddar; cover pan until cheese melts. (Add a splash of water if cheese in the pan isn't melting well!) Turn off heat; transfer to a plate.
• Fill buns with chicken patties and crispy fried onion. • Divide sandwiches and potato chips between plates. Serve with any remaining BBQ sauce on the side for dipping sandwiches.
