• Halve buns. • Melt 2 TBSP butter (4 TBSP for 4 servings) in a large pan over medium-low heat. Add buns, cut sides down, and toast, pressing down with a spatula, until golden brown, 1-2 minutes. • Turn off heat; transfer to a plate.
• Heat a drizzle of oil in pan used for buns over medium-high heat. Add chicken; cook until warmed through, 2-3 minutes per side. • Snip open a corner of BBQ sauce packet and drizzle as much as you like on top of chicken; flip and drizzle more sauce on the other side (save any remaining sauce for serving). • Top chicken evenly with cheddar; cover pan until cheese melts, 1-2 minutes. TIP: Add a splash of water to help cheese melt quickly!
