Pork Tenderloin
Pat pork dry with paper towels; season all over with salt and pepper. Heat a drizzle of oil in a large pan over medium heat. Add pork and sear, turning occasionally, until browned all over, 4-8 minutes. Transfer to a baking sheet. Roast in a 425 degree oven until cooked through, 10-12 minutes.
The quality of the meat was spectacular. I stopped buying it at the grocery because it was always, "just ok". This tenderloin was rich in flavor, moist and delicious.
I love having meats like this that you can just sauté up with some vegetables for a quick meal. They come already trimmed and portioned, which makes it easier on me.

I wasn't expecting to get two smaller pieces of meat and we had to do a lot of trimming. Lots of silver skin to remove and then some chunks of fat inside. Nothing like the picture.
With multiple recipes using pork, it should specify pork chop, tenderloin or cutlet.
