
We've got a shortcut to homemade curry that makes this vegetarian dish quick easy to prepare. You'll simmer chickpeas and spinach with our blend of warming curry spices, and serve it all over quick-cooking rice with a drizzle of cooling cilantro-yogurt sauce. A sprinkle of crunchy, nutty almonds makes a perfect finishing touch to this speedy meal.

Sugar
teaspoon (tsp)
Salt
teaspoon (tsp)
Black Pepper

Wash and dry produce.
Finely chop cilantro. Drain and rinse chickpeas.
In a small bowl, combine yogurt and cilantro. Add water 1 tsp at a time until mixture reaches a drizzling consistency. Taste and season with salt and pepper.

In a large pan, combine chickpeas, cream sauce base, curry sauce base, ¼ cup water, ½ tsp sugar (½ cup water and 1 tsp sugar for 4 servings), a pinch of salt, and pepper. Bring to a boil, then stir in spinach. Reduce to a low simmer and continue to cook, stirring occasionally, until sauce thickens and spinach has wilted, 3-5 minutes. TIP: If the spinach doesn't fit all at once, add a handful at a time until it wilts down.
While curry cooks, massage rice in packet to break up grains; partially open package. Microwave until warmed through, 90 seconds. TIP: Microwave times may vary. Be careful when handling and opening the pouch—steam may release!

Divide rice and curry between shallow bowls in separate sections. Top with cilantro yogurt sauce and as many almonds as you like. Serve.
Bravo! Fast & easy to cook. Nutritious & delicious. This meal made me fall in love with chickpeas. And the pre-cooked rice is a game changer. I'd order this again, especially if you could offer vegan options (yogurt & cream sauce). I'd be glad to pay the difference. Thank you!
The idea behind this 15-minute meal was good, but the amount of curry sauce and cream base was too small for this recipe and the flavors were not as good as if we had made the recipe using the base ingredients (ie. coconut milk, onion, spices, etc.). I personally prefer a creamier curry, and there just wasn't enough sauce mixture given the provided ingredients.
The curry hits you with so many flavours, it feels like an assault, its perfect. I wish the curry was spicier, or maybe given a spice level, and I understand the plastic-sealed rice for quicker cooking but nothing beats fresh rice. Highly recommend
Shared this with family who were in town for New Year's and a person who had wisdom teeth out. The extended family weren't sure about curries and spice and I needed to extend to recipe to feed 6 rather than 4. I added an extra can of chickpeas, more onion and bell peppers. I used a packet and half of the curry rather than two and retained the extra 1/2 for my spicy loving family members. I would normally have extended the sauce using coconut milk, but I was out so I used a little 2%, a little half and half and a little corn starch to prevent it from being too runny. I also added extra rice to the instapot. There was nothing left. For the wisdom teeth person, it went into the food processor with a squirt of the left over curry paste and she said it was delicious that way. My father in law, who is a 0 spice, not really into venturing into the culinary wilds, went back for thirds. It was a hit.
I don't normally use cilantro, but it was just the right touch to make this dish perfect! Fabulous dish, delightfully surprising, and mmm-mmm-mmm! I'm going to want this one again!
Who knew I'd missed having curry in my diet? This was such a delicious, easy, and comfort food worthy meal.
